Don't go mining unless you want to level engineering. If you do that just save everything you mine until you have enough (check a guide) and then drop it for herbalism. Herbalism is hands down more profitable than mining. I dropped 300 mining on my rogue for (dis)enchanting. I made so little gold off it I decided I was better being able to DE my items. In comparison a Black Lotus can sell for 75g right now on Anathema (pre nost shutdown they were spiking well over 100g/lotus). The only somewhat viable way to make gold as a miner is to be a warrior/healer and team up with the other class and farm DM:E 3 bosses. With that farm you get to DE 3+ blue items per run and mine two of the Rich Thorium Veins which have a chance to drop those crystals. tl;dr take herbalism, be a mage, and make 500g+ on AV weekends

I'd do battlegrounds, especially on the weekends, to try get to rank 7 to buy the first pvp gear. While doing that you should run dungeons too e.g UBRS for the Dal rend swords.

It wasn't this bad on Nostalrius. Its really broken right now. Mages hiding down the ledge in AB by the blacksmith wrecking havoc on you. In my opinion, things like this, where they know they shouldn't be able to shoot through a hill, should be classified as exploiting and result in a ban. It's tough as a melee right now. Though at least they said they just fixed vanish.

There's 60s and tons of 50s on Elysium now too. You will get ganked by higher levels on any server at this stage (except Darrowshire PVE) so don't really factor that in. It mostly depends if you want to raid and if so if you'll be happy following a Blizzard progression from the beginning, or if you want to jump in and do AQ in a couple months.

Either Anathema or Elysium will be fine. I know of at least one big guild on each faction for Anathema. As truce said, Bunnings Warehouse, formerly On Ya Bike, have a huge amount of numbers and were in the past 8/8 BWL. Maybe they still are. On the horde side you have Oceanics Thirteen and it looks like they've established themselves on the Elysium server too.

Is Shub still around? Not sure what his main character was but he was in your guild, I think. He had some alts in another he ran.

Usually we would agree to loot rules as we begin the dungeon. Most of the time we would all agree to roll need on any good BoEs, Pristine Black Diamonds etc... Flask recipes obviously. If you don't roll need you can be confident some people will, so you should always roll need. I would say if people had a differing opinion to this they were the minority, or not long level 60. Oh yeah, expect to see some runs advertised where certain items are reserved. They're more common than you think and I suspect will be really common for UBRS on the fresh server when keys are at a shortage, everyone needs everything and guilds need recipes etc.

Probably look for or start a MC pug to ease my way back into it. Plus I'm pretty confident my old guild will be in tatters so I'll guess I'll see who's about.

The time that Joana got to 60 in speaks for itself; it's a good guide. What you have to take into consideration though is that it's the first guide that comes up when you google "vanilla wow levelling guide" so you can bet that 80% of other players who'll be rolling on the fresh server have seen it too. That might make some other zones Joana usually excludes worthwhile visiting. That was my thought when I had a look at it anyway. If you just use it as a guide rather than the law then you'll do fine by it.
