From what I remember they initially said the Valkyrie would still be running but that realm seems gone and I tried logging onto my valkyrie account which didn't work. Will we ever be able to get those characters back? At least our 60s?

You'll be fine without dungeons, but as said install Vqueue. And just keep asking in general chat in different zones (In Westfall, Redridge and Duskwood). Go ask in trade and world chat as well. I tend to not have issues finding group. And whisper people like if you need a healer whisper people that are playing healer classes.

And to add, yes people still PvP on the PvE realm. We still do battlegrounds and we still do wpvp but we do it when we want to.

How can I make it only shows party/raid numbers and not everyone around me? By the way I collect character data for SW_stats and I'm wondering what issues SW_stats will cause? So far it doesn't seem to do anything.
