So joining a private server like Elysium/Nost what do I get and what do I not get....basically will ALL quest be available just like retail vanilla. or will there be missing quest and certain dungeons not available.. please explain to me why or if EVERYTHING will be available...im soooooo anxious to play but I hope its what I think it is...thanks guys!!!!

The only thing that isn't very close to or identical to retail vanilla is the talents. The rest is incredible close and accurate

It's pretty much Vanilla like, with some mobs having slightly better respawn rate, updated to 1920x1080 resolution (retail Vanilla didn't have it at the time, if I can recall), it even has less mobs below surface and bugging around then retail did. All in all, really great playing experience. Looking forward to the release.
